Let's make Mangú! I grew up eating this classic dish every single Saturday. There was never a weekend where my grandmother wasn't boiling plátanos and frying up eggs, salami, and queso to go alongside! What's your favorite part of Mangú? Is it the onions? The salami? Ingredients:
3 green plantains, peeled and quartered
6½ cups water, divided
1 tablespoon kosher salt
1½ tablespoons unsalted grass-fed butter
1 medium red onion, sliced
¼ cup white distilled vinegar
4 oz queso tropical, for frying
6 oz Dominican salami
2 large cage-free eggs, fried
Vegetable oil, for frying
