Another theory is that it is in fact about the organ, only it is about two literal hearts put together, which forms the heart shape.

Actually 'OK' sign came from a different story. When Americans fought in war (can't remember which one), they would write how many people were killed in a fight, for example, 12 Killed = 12K, 5 Killed = 5K, and then if 0 were killed, they would write 0K, which looks very similar to OK, both things mean positive feedback.
