Penne all’arrabbiata belongs to what is known as ‘poor cuisine’ which was exported by emigrants coming from the center of Italy. It might’ve originated from the Lazio region. While the true origins are unclear, the recipe is said to have been perfected in Rome in the 1920s by chef Antonio Cecchini, whose restaurant was appropriately called “Le Arrabbiate.”
