I have a suggestion: don’t cut away from the guest when they take a bite. The main thing of interest to viewers is their reaction to the spiciness. Cutting away defeats that. I do understand you have to show viewers the Scoville Level. Can’t you display it as an inset (picture in picture)? That way you’re doing both. Alternatively, you can just display it as unobtrusive text at the bottom.
