Actually discovered in my Albany Oregon Costco is that the quality of meat has declined drastically as the price has increased. We used to get the best meat but the best marbling like you said in this video prime ribs should be mostly round not oblong like New York strip. But the world does change

So you correctly said it was a USDA Choice and not a USDA Prime cut, yet you incorrectly called it a Prime rib when, in fact, it is just a rib roast.

well I just got back from costco doing a quick pre-holiday price check and the prime rib was about $16.00 a pound!!!! then I went to my local butcher and saw a beautiful 7 rib prime roast perfectly trimmed for 5.99 a pound. Guess which one I went with?

I’ve had great luck with the choice prime ribs from Sam’s club. Never tried Costco becuase there isn’t one in my city. My mamma used to make one every Christmas.

I normally buy prime at Costco. Btw, Knottywood has the best smoker pellets. I get the most consistent and accurate temps in my Traeger and the flavor and smoke ring is top notch.

Best way to cook a prime rib is to separate the eye from the cap so that fat all renders and becomes delicious. Then the eye takes longer to cook and your cap does not become overcooked.
