If you trade iron from golems to toolsmith for emeralds, you can then trade for a diamond pickaxe, making the challenge quite easy, but time consuming (you can also plant sapplings on the farm dirt to get a good source of wood for sticks to kickstart your emerald production)

There is a way to beat this challenge (I don't play Java super flat so pls correct me if I am wrong) you need to get iron from the village and then find a ruined portal once you complete the portal you go in the Nether and get eyes of ender (or try to find netherite in the nether) then go into the end, beat the dragon and get to the end city's and find diamonds there

The stronghold oddity is simple to explain: It generated on the layer and y cords it would typically, but because the ground is lower than it should be, the stronghold is floating and not encaved.
