TYPES OF POTATOES:
Starchy: Russet or Idaho. Best potato for boiling, baking, mashing, and frying, good for using lots of butter, cream, and cheese.
Waxy: Red, small, fingerling. Best potato for roasting as a side to roasted chicken or fish, boiling, potato salad.
All-purpose/Yellow: best potato for all types of cooking! Good for casserole, gratin.

Thanks for this! The potatoes we get at the grocery store arent labelled into types so i never knew how to differentiate. As i am venturing more into cooking with potatoes, this video really helps!

To throw a wrench into my whole video, my friends recently mashed purple potatoes which are waxy, by boiling them and mashing into 1.5 sticks of butter and they were pretty glorious.

this is not objective at all. you are shitting on waxy potatoes in every test for no reason. for everyone who watches this video, it's very important to note that this whole thing is this woman's objective opinion. i am a home cook myself who has been cooking for 15 years and i love experimenting with food. waxy potatoes have better taste and texture in everything be it frying, air frying, boiling, baking etc EXCEPT thickening. so in my opinion, use waxy potatoes for everything except soups and stews (even that has its own discussion since starchy potatoes will crumble and won't hold their structure). BUT THE BEST ADVICE IS THIS: do not believe me or this woman. potatoes are cheap, try them yourselves. you will see your french fries will not only taste better but will have better texture with waxy potatoes. and your soups and stews will be creamier with starchy potatoes but your potatoes will lose their structure. if you want your potatoes to keep their structure and be more creamy, use waxy potatoes in your soups and stews and use other thickening agents like potato starch or corn starch or heavy cream etc. this is the 1st video of yours i've watched bc it came up as the first result of my search but you did such a bad job that now i know to avoid your videos all together.

Finally someone made a video on this! I absolutely hate yellow and white potatoes! They both taste like Earth! I only eat red potatoes because they are the best flavor and texture wise! Yukon gold's are not all they're cracked up top be either. Maybe for soups, chips or French fries but not for pan fried or mashed potatoes...in my opinion. Red potatoes forever! lol
