Huh. I just noticed that each cuisine has special ingredients that are deeply beloved by the people and are a household staple. Indians have garam masala, Turkey has their pepper paste, Korea has gochujang, etc. That is really interesting

hey that's like a popular thing in india too it's literally called kofte and the fried balls are made using gram flour and grated bottle gourds! its absolutely delicious!!!

This is Fellah köftesi, it goes really well with some Turkish Yoghurt mixed with garlic. Also you may enjoy it by pouring some golden butter on it. YUMMM!!! By the way can you try Mercimek köftesi please

Turkish food is so good, we had a local restaurant that closed during the pandemic, I miss it a ton. Gotta figure out where I can get the ingredients online.

In India Bulgur is called Dalia.. broken wheat. There are many recipes using it. Kofta in North India has definitely come from persian food.

We have kofta in India as well, similar but with more Indian ingredients.

Another similar thing is dhokar dalna in Bengali cuisine, you can make it vegan by avoiding ghee.
And as for something very simple, dal er bori diye ghonto where you use dry lentil balls and bottle gourd

As I look at this shape I am reminded of the Polish dish kluski śląskie (vegan noodles themselves, they are made from potatoes and potato flour in a 4:1 ratio). They can be served with a mushroom or wild mushroom sauce (I don't know how to say it in English in Poland we also eat other forest mushrooms besides mushrooms, e.g. boletes, bay boletes, chanterelles) and fried onions.

Just made these with leftover cous cous and they turned out great! I used very fine durum semolina - actually called semola in Italian - and added warm water along the way to reach the right dough consistency. It is very straight-forward and forgiving. AND delicious!

I'm amazed at how good you pronounce these Turkish dish names. On a side note, that pepper paste you are using also has a version that's a mix of pepper and tomato paste. I use the exact brand "Öncü" mixed paste in all of my dishes. I think it's a quality brand you can find in stores.
