Heating cooking oil alters its composition. It only takes one use to alter the composition of the oil, and reusing oil, especially at too high of a heat, can cause a build-up of harmful byproducts. Each use creates more and more build-up, increasing the risk of harm.

Byproducts increases risk of stroke and atherosclerosis. This would also elevate your cholesterol levels.

If you are eating out, You are eating food fried in reheated oil, They don't even strain it. They will fill the fryer, turn fryer off nightly, and in a good restaurant empty the fryer, clean the fryer, and dispose of oil, some restaurants are using the oil for a month or more, and just adding more daily.

This is why I don't deep fry everything...I try to shallow fry mostly and only use the min amount for deep frying...or just bake

This has been a huge debate in my family. I always felt uncomfortable re-using oil. My family would always accuse me of wasting the oil when i discard it after one use. I rarely fry food so the used oil would be sitting for extended periods and the thought of re-using it after weeks or months makes me really uncomfortable.

I'd recommend straining through a coffee filter as well to get any small particulates like seasonings that could burn in later frys and make the oil taste bitter.

Sprinkle some flour in the cool used fry oil - wait for it to settle at the bottom. Then strain that oil through a fine sieve - the flour will also help get lower the intensity of any flavour imparted to that oil when it was used the first time.

I want to add it's better to retain the oil quality if you constantly fish out the particulates with a skimmer as you're frying, especially between frying in batches.

To those freaking out over reusing oil:

Studies indicate reusing it three times is safe, as long as you aren't overheating the oil until things burn in it. It's after that, that things get sketchy.

U don't need to throw it out the left over oil also works well for cleaning garden tools and saws to prevent rust and corrosion
