Thank you Dr William Davis for all your education. I am very enriched by your teaching and sharing. May I ask is Fermented Sourdough bread ok for consumption for someone trying to limit gluten?

I definitely noticed the sugar in plain bread, I can just keep eating it, therefore I avoid it 😢 But is it okay to bake a sourdough baguette every now and then? And top it with some homemade kefir cream cheese from raw goat milk to reduce the glucose spike? I use French flour, Keltic sea salt, fresh sourdough starter and water for baking.

Sorry doctor, but you make a serious error here. Amylase is present in saliva, yes, but is inactivated when food enters the stomach, because amylase requires an alkaline environment. The pancreas secretes amylase into the duodenum, where carbohydrate digestion continues. Carb digestion does not take place in the stomach, except in the sense of food being made more liquid by stomach muscular action.

This guy is silly. I guess he missed the class discussing INTRAMYOCELLULAR LIPOTOXICITY which is caused by eaiting a low carb diet, the one he recommends. Fat filled Cells make you insulin resistant. Get it straight and stop letting $$$ be the root of your recommendations. Take your followers on the more difficult path to superior health - high fiber plant-based diet so they don’t die of a heart attack on your plan.
