Soy-marinated steak that’s simmered to tender perfection. The soy/citrus marinade offers a great balance of savory and tangy flavors which makes this an ideal companion with a bowl of rice.

Ingredients
Soy/Citrus Marinade
1 lb. skirt or chuck steak
¼ cup soy sauce
Juice from ½ lemon
¼ teaspoon garlic powder or 1 garlic clove (minced)
¼ teaspoon black pepper

⅛ cup cooking spray (avocado oil works well due its high smoke point)
1 onion (thinly sliced)

Directions
1. In a small bowl combine soy/citrus marinade ingredients. (:01)
2. Marinate for at least 1 hour, ideally overnight. (:05)
3. Coat pan with cooking spray over medium heat (:06)
4. Sauté onion for about 3 minutes (:08)
5. Add marinated steak and juices into pan (:11)
6. Reduce heat to low and cover (:12)
7. Simmer for 45 minutes or until steak is tender (:14)
8. Serve over white or brown rice (:16)
