Guyanese 🇬🇾 Metemgee| recipe

ingredients:
1lb cassava/yuca
1 lb eddo root
1 lb sweet potatoes
2 half ripe plantains
1 medium onion diced
1/2 green bell pepper diced
1/2 red bell pepper diced
2 tbsp minced garlic
1 tbsp grated ginger
Chopped parsley
Chopped scallions
thyme
wiri wiri peppers
chili & scotch bonnet ( optional)
5- 6 cups coconut milk
2 tsp bouillon / cubes
1tsp seasoned salt
1 tbsp mushroom seasoning
1/2 tsp black pepper

duff/ dumplings
1 1/2 cups all purpose flour
2 tsp baking powder
2 tbsp sugar ( use less if preferred)
1 tsp salt
1/4 cup Chopped parsley ( optional)
warm water
