Pectic enzyme does a great job clearing the haze out of cider. I started using the enzyme a couple of weeks ago and couldn't believe how clear the cider became. The advantage to using pectic enzyme is it's cheap and you need only 1/4 tsp. of it to clear a gallon of cider. Up 'til now I hadn't been hopping my cider but decided to give it a go since I like the taste of hops and wanted a drink with a more adult taste. I generally ferment mine to about 6% abv and don't really care to carbonate it. What I do is when the fermentation is done I rack it into another container and add 1/3 cup of sugar to give it a little sweetness then put it directly in the fridge. I do a gallon at a time and rotate the containers for lack of space so while I drink one I have a full gallon in the back of the fridge and another gallon on the counter fermenting. I've found that my hard cider is almost as good as wine during a meal. I also brew ales and currently brew a potent English porter and a nice Belgian saison ale. Those I brew in 5 gallon batches.

Cracking cider all three look spot on well done, I’ve never back sweetened and never add sugar to increase ABv.

For 20 liters, how much hops would you use, also with what you clarify and also at what time do you add the hops, and also how much sugar to add per liter or per bottle
