Today I want to show you my fail-proof way of making restaurant quality beef chow fun at home. In this episode, we will go over important details and techniques throughout the video that will give you perfect beef chow fun every time.

mung bean sprouts 2 oz/50 g
one half of an onion 3 oz/80 g
3 stalks of green onion
rice noodle 14 oz/400 g
black pepper
oil for cooking

-beef 6 oz/180 g
soy sauce 1 tsp
dark soy sauce 1 tsp
oyster sauce 1 tsp
baking soda(optional) 1/2 tsp
corn starch 1 1/2 tsp
sugar 1/2 tsp
oil 1/2 tbsp
sesame oil(optional) 1 tsp

-sauce
soy sauce 1 1/2tbsp
dark soy sauce 1 tbsp
sugar 1/2 tsp

I just made it all as you showing (noodles from scratch and they are very good)and eating it now. It came out perfect as I used to have take away in Sydney but now I am in Poland. I can stop dreaming about it and just do it. One of my favorite dishes. Thank you 😊😊😊

1. Half freeze the beef after cutting into long rectanglular prism with the grain running the length of the prism. Makes cutting thin shingles or rectangles way easier. Just needs to be firm to touch and not floppy, holds shape.
2. Marinade needs very little time when seasoned this way, too long and it becomes too salty. 10—15 minutes max. Also use very little baking soda as it can leave an odd aftertaste if you use too much. Quarter tsp enough for the amount of meat she uses. Since you are cooking over standard stove sesame oil should not burn off its flavours but you can also add a few drops after cooking too.
3. Stir fry in a wok or standard cast iron, steel pan just preheat on high until steam and even a touch of smoke comes off the metal. Takes 30 seconds to 2 minutes depending on heat source (electric vs fire vs induction) and thickness of metal. Thin coat of oil (approx. 1 tbsp) and heat till shimmering.

This looks delish! Beef Chow Fun is my favorite Chinese food. It doesn’t hold up real well as a leftover, so the idea of preparing it fresh at home is terrific. Not sure where i can find fresh rice noodles in the small town I live in, though. If I can find some somehow, I will definitely make this recipe. Thank you!
