I did this with a six pound rib roast last week for a group of five. It was far and away the best rib roast I have ever done. Both of my male guests are BBQ mavens and both raved about the meat. I cooked it until the center of the roast was at 135 degrees for medium rare. Took four hours. at 225 and twenty minutes at 300 to bring it up to 135. I wanted it done in time to tent it for 25 minutes in tin foil. OMG! I can not recommend this too highly.
