I don't know anyone who doesn't love gnocchi, but did you know there are many types of gnocchi?! This pumpkin gnocchi uses pumpkin puree (or roasted pumpkin!) to create a delicious and easy gnocchi for the fall! Let me show you a few ways to create the ridges on your pumpkin gnocchi, as well as how to take them to the next level and shape each gnocchi into mini pumpkins!! I also show you how to make a creamy brown butter and sage sauce; the perfect sauce to smother your pumpkin gnocchi with!

🥑🍓🥦🍉🍋 INGREDIENTS 🥔🥚🍫🧁🎂🍰

Pumpkin Gnocchi
3 cups (360 grams) tipo '00' flour (plain or all-purpose flour will work too!)
1 can (2 cups, 14 oz., 425 grams) plain pumpkin puree
2 eggs
1/4 tsp. (2 grams) nutmeg (optional)
sunflower seeds, for decoration (optional)
parmigiano reggiano cheese, grated to serve

Brown Butter Sage Sauce
3 tbsp. (40 grams) butter
2 tsp. (2 grams) dried sage

This recipe serves 4 people as a main course

Fun video! My father was German so I grew up with the tradition of making marzipan fruits and veggies every Christmas. We made marzipan pumpkins exactly the way that you made the pumpkin gnocchi... except instead of a sunflower seed, the "stem" was a clove with the flower side down and the pointy side sticking up! (I'm in Germany at the moment, BTW!)

Ive made gnocchi many times over the years including pumpkin gnocchi but I ve never seen any one shape them into little pumpkins. What a fun idea and I will be making some this weekend for sure. Thanks for the inspiration 🌺🧡🌺🧡🌺🧡🌺

Love the pumpkin shapes.
I think the pumpkin gnocchi would be great as dumplings in a harty stew or added to a bowl of pumpkin soup or any soup really after cooking in the water.

Mmmm pumpkin soup with a dollop of sour cream and snipped chives.

I just closed my eyes and imagined them in a bowl of minestrone. Yeah I think it'd work.

Better stop with the ideas before I forget what this recipe is all about.
