The reason canned pumpkin is more orange is two fold; 1) you used a squash, not technically a small cooking pumpkin, flesh is a different color, 2) canned prior has oxidation which darkens it, anyone who cans can tell you that in the canning process, apples, applesauce, peaches, etc are a darker color once canned.

You're correct in that canned pumpkin is different! But it's not dye. They use Dickinson pumpkins and hard squashes can all be called pumpkins since this term doesn't distinguish the exact type of squash we think of when we hear pumpkin. It's something like that.

Gnocchi is supposed to have filling; just so you know usually the vegetables and cheese / other seasonings are on the inside so u get a burst of flavor :) the outside is pasta coated with Sauce!

The pumpkin in cans is darker because they reduce it and make it more concentrated than fresh pumpkin, if you cook pumpkin slowly for longer periods of time it would eventually look similar to canned pumpkin
