What I eat plant-based👇🏼🌿

Wholesome delicious meals that are high protein & fiber!

Breakfast: Iced soy matcha & vanilla protein pancakes

Snack: Orange chia pudding with fruit & choc sauce (3-4 tbsp chia seeds, 1/2 cup soy milk, 1/4 cup fresh orange juice & 1 tsp monk fruit sugar — combine all and set in fridge to thicken)

Lunch: Nourish bowl with crunchy chickpeas, cauliflower, salad & hummus

Dinner: eggplant & tomato spaghetti (don’t have a recipe for this but it has onion, garlic, eggplant, tomato pasta sauce, parsley & spaghetti)
