Resep Gehu Pedas (10 pcs)
Bahan:
10 pcs tahu kuning
100 gr tauge
100 gr wortel, potong korek api
100 gr kol, iris
7 buah cabai rawit merah
15 buah cabai keriting
3 siung bawang merah
2 siung bawang putih
1 batang daun bawang, iris
½ sdt garam
1 sdm gula pasir
½ sdt merica
½ sdt kaldu bubuk / penyedap
2 sdm tepung tapioka
Bahan pelapis:
8 sdm tepung terigu protein sedang
3 sdm maizena
1 sdt baking powder
1 ½ sdt kaldu ayam bubuk
125 ml air
2 sdm minyak goreng
¼ sdt bubuk kunyit
¼ sdt bubuk paprika
2 siung bawang putih halus
Langkah:
1. Masukkan tahu ke dalam air fryer, masak dengan suhu 175-180 derajat masing-masing sisi selama 10 menit, tiriskan lalu keluarkan isi tahu
2. Blender bawang merah, bawang putih, sebagian cabai rawit, cabai merah, dan sedikit minyak hingga halus
3. Tumis bumbu hingga wangi kemudian masukkan daun bawang dan wortel, masak sebentar lalu masukkan kol dan tauge, aduk rata
4. Tambahkan garam, gula pasir, merica, dan penyedap, aduk rata
5. Pindahkan ke dalam mangkuk, masukkan potongan cabai rawit, tutup dengan plastic wrap diamkan hingga dingin
6. Setelah dingin, masukkan tepung tapioka, aduk rata kemudian pindahkan isian ke dalam piping bag
7. Isi tahu yang telah dibelah dengan isian sayuran
8. Siapkan mangkuk, masukkan tepung terigu, maizena, kaldu bubuk, bubuk paprika, bubuk kunyit, dan baking powder, aduk rata
9. Masukkan air, minyak, dan bawang putih, aduk rata
10. Panaskan wajan, celupkan tahu ke dalam adonan tepung basah lalu masak tahu hingga terbentuk crust atau lapisan kecokelatan
11. Masukkan ke dalam air fryer masak selama 8 menit di suhu 180 derajat kemudian balikkan tahu, masak kembali selama 7 menit
12. Gehu pedas siap disajikan

Spicy Tofu Recipe (yield: 10 pcs)
Ingredients:
10 pc yellow tofu
100 g beansprout
100 g carrot, sliced into matchsticks
100 g cabbage, sliced
7 pc red bird’s eye chili
15 pc curly chili
3 pc shallot
2 clove garlic
1 pc green onion, sliced
½ tsp salt
1 tbsp sugar
½ tsp pepper
½ tsp stock powder / flavor enhancer
2 tbsp tapioca flour
Batter ingredients:
8 tbsp all-purpose flour
3 tbsp cornstarch
1 tsp baking powder
1.5 tsp chicken powder
125 ml water
2 tbsp oil
¼ tsp turmeric powder
¼ tsp paprika powder
2 clove garlic, minced
Steps:
1. Place the tofu in the air fryer. Cook at 175-180°C for 10 minutes per side. Set aside, then scoop out the inside.
2. Blend the shallots, garlic, some of the bird’s eye chili, red chili, and some oil until smooth.
3. Sauté the blended spices until fragrant. Add green onion and carrot. Cook for a moment, then add cabbage and beansprouts. Stir.
4. Season with salt, sugar, pepper, and flavor enhancer. Mix well.
5. Transfer to a bowl. Add sliced bird’s eye chili, then cover with plastic wrap. Let cool.
6. After the filling has cooled, add tapioca flour. Mix well, then transfer the filling into a piping bag.
7. Fill the tofu with the vegetable filling.
8. Prepare a bowl. Combine flour, cornstarch, chicken powder, paprika powder, turmeric powder, and baking powder. Mix well.
9. Add water, oil, and garlic. Mix well.
10. Heat the pan. Dip the tofu into the batter. Pan-sear the tofu until a crust or a brownish layer is formed.
11. Place the tofu in the air fryer. Cook for 8 minutes at 180°C, then flip and cook again for 7 minutes.
12. Spicy Tofu is ready to serve.
