The Weasley's didn't spend ALL the winnings on the Egypt Trip. They also bought Ron a new wand and probably spent a chunk on other school supplies for the kids, additionally spent some money on staying at the Leaky Cauldron for a couple days. Possibly also set aside a small chunk in their vault.
