Hi pat, this is a Japanese fusion of Thai/Cambodian/SE asian pumpkin pudding. Yes the entire pumpkin is carved out to make a mold for the pudding 😃

Kabocha or any squash really originated from the Americas so if u go to Hispanic supermarkets in the States u can usually find kabocha

Seeing the pumpkin... I can't help think of Pumpkin... I mean Momometal. Saw a video of Babymetal talking about their favorite food. Some were quick to say, during her time in SG, she talked about her love of pumpkin, so much. That the other girls apparently called her pumpkin or to shut up, pumpkin. Apparently loves simmered pumpkin.

Yum. I had pie from it in Narita. It was ethereal. The Cafe is no longer there. A huge loss.
