A rule of thumb for your leftovers

There’s a ton of complicated chemistry going on in leftovers. But you can kind of boil things down to one pretty good rule of thumb: foods that improve by cooking longer - like stews, chilis, and curries - also tend to improve as they sit longer, whereas foods that cook quickly don’t tend to fare as well the second day. But there are definite exceptions… I mean, who doesn’t love leftover Chinese food?

Chinese takeout certainly doesn't improve with time in the fridge but it's so delicious that any degradation barely hurts the experience. Good stuff

Wait. I love leftover Chinese food. It really depends on where I bought it, though. Some are not good the next day. Some tend to taste about the same, and I love it.

i find that like مركة فاصوليا (bean broth) essentially beans tomato paste some garlic extra can taste good and some good شوربة عدس (lentil soup) taste dosnt taste although potato fries just taste bad after an hour or too just tastes like cardboard

Old takeout is just a splash of hot sauce and zap in the microwave away from being edible again

Oh yeah! Over here, Chinese food is great when recooked. I fry leftover vegetables and red meat, and make soup with the leftover chicken.

Meanwhile, leftover pizza is generally pretty good... if it is stored and reheated properly.
