Ingredients
1 ¼ Cup Almond flour
3 Tablespoons Granular Sweetener
5 Tablespoons Butter, melted
8 ounces Cream Cheese, room temperature
1 Large Egg, room temperature
¼ Cup Powdered Sweetener
¼ Cup Sour Cream, room temperature
1 teaspoon Vanilla extract

Instructions
Preheat the oven to 350F and line a 12 cup muffin tin with liners
Crust:
Mix together the almond flour, granular sweetener, and butter. Spoon the mixture evenly in the muffin cups and press in with your fingers.

Filling:
Combine the cream cheese, egg, powdered sweetener, sour cream, and vanilla extract with a hand mixer until smooth. Spoon the mixture evenly into the muffin cups. About 2 tablespoons for each cup.

Bake in the preheated oven for 20 minutes. Remove from the oven and let cool completely. Chill in the refrgerator for atleast 3 hours to firm up. Serve.

I love this recipe. My sweetener was Xylitol and I froze the cheesecake for a little instead of putting it in the oven. Came out great

Made these for myself for one of my thanksgiving desserts. I used the recipe posted with sour cream- don’t think it’s mentioned in video. Love them! They remind me of a Mexican wedding cookie and cheesecake combo. I used mini cupcake liners and will be eating some of them topped with a strawberry slice and maybe some whip cream. So good and will be adding these to my most loved keto desserts!! Ty

Sometimes I add some melted chocolate and layer on top of the crust before adding the cheese mix...a raspberry in each goes a long way too...I also love adding some lemon rind to the cheese mix ;)

I was just wondering if you need to refrigerate the crust because in the video it says to but in the comments you don’t mention anything about refrigeration

I made them today and I love it thank you will bring it for a pot luck. Also I did not have sour cream and used keto yogurt instead 😊❤

Oh I just made this WITHOUT sour cream😮 I only heard you say eggs, cream cheese, sweetener, and vanilla, it wasnt difficult without the recipe but the recipe would have made it easier. I did look in the comments but didn’t see it…….. until now….. but they are already in the oven. I guess we will see how they firm up 🤷‍♀️
