I had a question though - could end users upload the excel data into the dataverse tables themselves or is there a way to automate this process? the app you are creating at the end is canvas app not the model driven app

Select another powerapps environment and try this again. You will find you can’t select an existing table. Why? I noticed your on the default environment.

You're creating a canvas app starting from dataverse data, that is not a model driven app.
