Low Carb Almond Cake Sugarfree! Glutenfree!

How to make a sugarfree and gluten free Almond Cake. You can make this with just few ingredients and without electric handmixers.

Here's what you'll need:
3 egg yolks
1 tsp vanilla
1/4 cup milk (60ml)
1/4 tsp salt (2g)
1 cup almond flour (112g)
1/2 tsp baking powder

3 eggwhites
1/2 tsp of vinegar
2-3 tbsps of stevia
some almond flakes

Baking time may vary depending on your oven specifications. Please adjust accordingly.

Pretty good. My batter wasn’t frothy because I accidentally started adding the ingredients wrong. The cake did not rise much but it was still good. I used coconut sugar. Next time I’m going to double the recipe and maybe try blueberries at the bottom like some others did. We used shedded coconut as the topping. It taste very light and healthy 😊

Nice Low Carb recipe.
Just 2 things because I bake LC cakes often.

Stevia is not the best choice for cakes because the aftertaste is bittersweet. Its fine for no bake desserts. Its better when its a stevia blend with erythritol. Although the best choice for baked sweets is monkfruit or allulose. If not available the second choice is erythritol or xylitol.

Each almond flour brand absorbs slightly different amount of liquid. So sometimes you have to add a couple of tablespoons milk or cream or one beaten eggwhite to have the right consistancy. Its very helpfull to say what almond flour brand you use.
Your flourless swedish almond cake is great by the way.

Please say a prayer for me. I’m going to double this recipe because I’m going to be making a sheet cake and I’ve never done this before and I’m making it sugar-free low carb for someone who is on keto for his birthday tomorrow. I will let you know how it turns out I’m gonna make the icing as well. I wish you had placed on here how many servings this did I made you three times the amount, since this is a small cake that she made.

used this the other day for the base of a cake with blueberry, raspberry, banana (mashed lightly with a fork) filling in between layers closed with whipped cream, toped with some strawberries and lime zest blood sugar went from 4.7 to 5.4 1½h later after a decent slice (and a low low carb meal (some shredded carrot in my coleslaw). 👍 didn't use stevia i used some granulated cyclamate+ saccharin sweetener, about 3 teaspoons in total. 2 in base 1 in whipped cream (3 dl unwhipped)
