Purple kale AKA Red Kale. Also known as red Russian kale, red curly kale, purple curly kale. This variety taste spicier and slightly more bitter than regular green curly kale. How to cook purple kale? How to cook red kale? Also, it takes slightly longer to cook, as I noticed it is slightly hardier and more fibrous than regular green kale in both the stem and the leaf. I do not remove the stems when I cook kale. I just chop them into bite-size pieces. I cooked this kale for about 30 minutes. Bringing it up to a boil at medium-high heat and then reducing it to a low medium heat to steam with the lid on the pot.

I like it in smoothies as well as avocado & kale salad. But my fav is to cook it with some chopped garlic/red onion/red bell pepper, and a little veg broth until almost tender. Then turn down the heat to simmer, and add some cooked chickpeas, tahini, liquid aminos, black pepper, onion/garlic powder, and stir until everything is evenly coated. Then I spoon it over some cooked millet or quinoa. It's like a creamed spinach. good.

Never thought about cutting stems into bite size pieces, I always pitch mine

Pressure cooker is excellent. Cooking time is slashed more than half compare to boiling and uses less water.

So why cook it? Is there a benefit in it? I ask cause I eat it raw and just love the flavor
