Usually in Thailand, we just make a large pot of these and eat it for the whole week or per my household anyhow. Make 2 or 3 varieties of these curries so you can revolve them around different meals of the day enjoy without it being boring 😊. Trying to buy asian spices in the western wolrd would be a great hassle though lol. Sorry, my English isn't good😅

Variety is the spice of life; too much of anything gets old fast. Even favorite foods get old after a while, so always be sure to promote dietary variety, not only does it not get old, but it's healthy too.

Oh. I also sometimes leftout the protein of choice. Just freeze the soup/paste with vegetables. Then, people can choose if they want chicken/fish/tofu/meat with their curry/soup.

GREEN CURRY
ingredients
4lbs chicken breast, sliced
6 cloves garlic, minced
4 tbsp ginger, minced
6 bell peppers, sliced
2 onions, sliced
1 lb mushrooms, sliced
12-16oz spinach, split in two
2-3 limes
4-6 tbsp green curry paste, depending on spice - i used a whole jar of mekhala
3 15oz cans coconut milk
3c chicken broth (i think, maybe more)
1/4c brown sugar
2 tbsp fish sauce
1/3c soy sauce
1 tbsp msg, optional if it weirds you out
thai basil for garnish

steps
1. briefly sautee minced garlic and ginger. add in curry paste and stir until aromatic.
2. add coconut milk, soy sauce, fish sauce, brown sugar, and half of the spinach - blend with an immersion blender or whatever you’ve got.
3. add chicken broth; bring to a simmer and add chicken, peppers, mushroom, and onion.
4. once chicken is cooked through, add remaining spinach and juice of 2-3 limes
5. finish with salt and more soy sauce, to bring to desired salt level
6. thicken with cornstarch slurry if you prefer a thicker consistency. let cool and top with thai basil. serve over basmati rice.

I add coconut flakes, ( used in baking) if it’s too spicy, it helps with the spicy heat.

please do 乾炒牛河 or beef chow fun. not the main hong kong dish but it is my personal favourite, especially with iced ovaltine.

i love that you include disinfecting your counter because in some cases that could mean the difference between eating good for a week or ending up a chubbyemu video, especially for the portions you don’t freeze
