That's not how panko is made at all. All he did was make bread into breadcrumbs. Panko is an entirely different process.

breadcrumbs are processed much more fine and the crust ends up giving it a much darker appearance

Panko, TRADITIONALLY is made with a galvanization box to electrocute these crumbs
