These crunchy Cake Rusk are a healthy & tasty snack to enjoy along with tea😋! These Rusks are eggless and flavored with cardamom and I’ve also added some pistachios & almonds for some extra crunchy bites.
*1 cup Whole Wheat Flour/ गेहूँ आटा
*1 tbsp Baking powder/ बेकिंग पाउडर
*1/4 tsp Baking soda/ बेकिंग सोडा
*1/4 tsp Salt/ नमक
*1/3 cup Curd/ Yogurt/ Dahi/ दही
*4 tbsp Jaggery powder/ गुड़ पाउडर
*2 tbsp Oil/ तेल
*1/2 tsp Cardamom powder/ एलाइचि पाउडर
*1/2 tsp Cinnamon powder/ दालचीनी पाउडर
*2 tbsp mix of chopped Pistachios and Almonds/ बादाम और पिस्ता
INSTRUCTIONS
1- In a large bowl, add all the ingredients and using your hands form a dough. And at this stage preheat the oven at 180°C/ 350°F for 10 minutes.
2- Transfer the dough on a rolling board or any flat surface and shape it into a log. Place the dough log on a parchment paper lined baking tray and bake at 180°C/ 350°F for 25 minutes.
3- Let the dough log cool for sometime and meanwhile preheat the oven again at 150°C/ 300°F for around 10 minutes.
4- Cut the dough log into equal sized rusks. Arrange the rusks on a parchment paper lined baking tray and bake them at 150°C/ 300°F for around 35 minutes until they turn crisp. Let the rusks cool completely and enjoy with your favorite hot beverage!!
