You can also add ginger, cumin powder, coriander, green chillies, salt, etc and make a stuffing. Use this stuffing to make Aloo Parathas and have it with ginger chai

Add a small piece of cheese and instead of mixing the cornflour throughout the mashed potato. Just put it in the fridge for it to firm up, make balls and coat with corn starch or potato starch for a more crispy exterior-gooey interior... Similar to how you make truffles.
