Ingredients:

5kg fresh lean ground pork (70% lean and 30 % fat)
250g sugar
40g Salt
200g baijiu (白酒) or (rose wine,rice wine ,dry sherry)
250 light soy sauce
10 meters Sausage casing

Instructions:

1. Select 5 kilograms of fresh pork shoulder meat (70% lean pork + 30% pork belly fat). Cut the meat into small pieces. Place the lean pork and pork fat in separate bowls.

2. Combine the pork fat with sugar 250g, stirring well. Allow it to pickle for approximately 6 hours.

3. Add salt 40g, baijiu 200g, and light soy sauce 250g to the lean meat. Stir until fully absorbed and let it marinate for 6 hours.

4. Wash the salt off the sausage casing and soak it in water for 10 minutes.

5. Mix the marinated fat and lean meat thoroughly.

6. Knot one end of the sausage casing.

7. Use an enema device to string the mixture into the sausage casing, tying it with a cotton rope to form sausages.

8. (Optionally, boil the sausages in hot water for a few seconds.)

9. Let the sausages dry in the sun for about a week.

Steam or stir-fry the sausages before serving.
