Thieboudienne: Senegal's national dish - Red Rice With Fish And Vegetables

Thieboudienne is the national dish of Senegal. It is made with rice, fish and vegetables. All the ingredients are simmered in a delicious broth that tastes of aromatics, tomatoes and fish. We also use a very fragrant mollusk, the yet.
Follow me:

👩‍🍳 Ingredients for 8 people
Aromatic paste:
1 onion
20g parsley
40g garlic
1 green chili (sweet or hot)
1 tsp salt
1 tsp ground black pepper

Other ingredients:
1kg fish (barracuda in the recipe)
3 carrots
1 eggplant
¼ cabbage
¼ butternut
3 African eggplants
1 cassava
2 mini sweet peppers
1 habanero chili
2 végétarien chilies
1 onion
15g yet: dried mollusk (optional)
20g guedj: salted and dried fish (optional)
3g dried white bissap flowers or 10g of tamarind paste
1 lime
20cl vegetable oil
2 bay leaves
3 + ½ tsp salt
150g tomato paste
2L water
500g broken Jasmine rice

This has to be one of my favorite versions of this dish! The time you took and detail you provided was inspiring. I just love seeing another person who loves cooking world cuisine for the joy of it and it’s so heartwarming to see what I perceived as an Asian woman, with a French accent, making a West African dish that I, as a woman of similar differences, love recreating meals and the memories I love from around the world. Well done Morganne its impressive i'm so happy to see this video how i love this dish so much its also our national dish in the gambia ee call it benachin and i'v eaten it in dakar senegal it was the best ever thieboudienne i have ever eaten in my life

Oh my Lord! I thought Senegal fish stew was fish, tomato, garlic and chili peppers served over rice. This is like building a space ship!
Well, I think I am going to make a basic fish stew INFLUENCED by theboudine. I did buy garlic, fish sauce, tamarind, tilapia (filet -- I can't have food looking at me) and 🌶️ chilis. When I'm done, I'll make the rice in the remaining broth as that seems like the most important difference with my usual cooking. I'm very impressed with the cooking skills of Papa T!
