Zoro already defeated mihawk in the training arc . The theory goes like this , In the two years Zoro spent on kuragaina Island , he actually beat mihawk once , that is when he lost his one eye . But the truth is that , he rather travel alongside his crew while they pursue their dream together than have this early accomplished be acknowledged by the world. So he told mihawk that it doesn't count and asked him to act as if it never happened. Also notice , Zoro never once said that he wanted to defeat mihawk but instead he just says he want to become a greatest swordsman.

I doubt that.. because he only got a hold of conquerors haki infusion in swords in the fight with King. Him being able to take on Mihawk and defeat him without conquerors haki... I don't think so. Mihawk is crazy powerful, and I think we'll see a fight someday with Mihawk if Strawhat crew crosses paths with cross guild.
