It's quite hilarious that mihawk has seen whitebeard tilted the ocean, blackbeard using two devil fruit, shanks stopping a war , luffy challenging the 3 Admerial, roger is ace's father, dragon is luffy's father and zoro defeating some monke surprise him the most

We know the reason why he accepted Zoro as a disciple, he approves Zoro's effort to be useful to his captain. Also I think that another reason for this is Mihawk likes to have a good challenge. After Shanks losing his arm, he must be so bored to a certain point, so he decides to raise a rival for himself. "I cant find an opponent, so I'll make one myself". That's what I call badass.

Mihawk thought zoro can't beat the baboons that's why he was forced to stay on the island. He got shocked that zoro defeated the baboons but still chose to stay and swallow his pride to ask him to train him, mihawk is impressed with zoro's loyalty towards his captain.

Mihawk wasn't impressed with him beating the baboons, he was surprised that Zoro threw down his pride as a swordsman, ignoring everything he stands for in order to get stronger for his captain.

He'd never expect a man like Zoro to swallow his pride and beg his enemy and possibly potential rival for guidance.

Logically assuming, Mihawk thinks Zoro begs him for training because the baboons didn't let him go away from the Island, making Zoro loose to them.

As Zoro stated the opposite, proving he could leave at any point, that made Mihawk realise that he's serious about growing as a swordsman, even if it means to loose his sense of pride.
