I served mine with fresh ricotta, you can easily make this at home as well and I've linked to the recipe video down below. I also topped it off with some chilli flakes and olive oil. Louisiana, USA made this today. I had no spinach, so I used fresh collard greens from the garden. It was FABULOUS!! Even the VERY CAJUN hubby liked it.

made this and it came out great! 1 thing is the moisture from the spinach was more than expected, so I had to add a little more than 2 cups of flour.

Your videos are a delight for the senses. I made pasta in the past but not this simple way. I will try it. I like how you incorporate all the spinach, (or beet, in another of your videos) into the pasta, instead of juicing and losing some of the fiber that is healthy. I will try. Thank you for adding suggestions to serve. I think this pasta could be made without eggs for a vegan version, but eggs are so delicious.

I've had a rough day, this was going to be my "get over it" recipe but I was going to give up on the idea and sit in misery, every other video is spending too long on pointlessness and I was struggling to feel a reason for trying. This was relaxing, informative and the guitar riff just made me feel like I should keep trying - so I'm gonna go grab the flour and boil some water.

When you started making the sauce i was thinking, " I'd be sprinkling s one chilli flakes in about now for me." But you sorted that out at the end thank you. One if dim treasured memories from about 65 years ago as a small child was watching our Italian neighbour rolling out spaghetti on the terrazzo floor of the back verandah and hanging it out to dry on a wooden clothes hoist. Sauce was just tomato and garlic made from the half acre garden. Never tasted anything better.
