Pork Schnitzel With Austrian Potato Salad

As I wind my way through the different countries, I find myself in Austria. Todays recipe suggested to me by Isi Kocht, who has a YouTube channel under the same name, is Pork Schnitzel and Austrian Potato Salad. The potato salad can be served hot or cold making this meal great for summer and winter alike.

INGREDIENTS POTATO SALAD:
2 large salad potatoes agria
1/2 cup of quality beef stock (after reduction )
2 tablespoons red wine vinegar
1 tablespoon mustard or Dijon mustard
1 tbsp dried tarragon
1 teaspoon raw sugar
1/2 medium red onion finely chopped
2 tbsp extra virgin olive oil
salt and pepper to taste
Mint leaves chopped finely to garnish

INGREDIENTS PORT SCHNITZEL:
2 pieces pork schnitzel
1 cup panko breadcrumbs
1/2 cup plain flour
1 large egg beaten

John when I have this potato salad in German restaurants it's usually served warm or hot. I think I prefer it that way especially with the schnitzel
