OMG just made this with a couple variations and it was sooo delicious. No white wine, No peas, chicken stock instead of veg stock, and topped it with fresh parsley. This was so good I will definitely make it again. Thank you!!

I’m so obsessed with orzo! I’d also love to see more quick and healthy lunch ideas. I’m a high school student and I love cooking but I haven’t had as much time recently. However, I’m always wanting to try and stay healthy!

This looks yummy, can’t wait to make. I was wondering if you or anyone else has ever added a scoop of pea protein to these vegetarian recipes. I’m fighting cancer and I need to keep my protein up but not with too much meat. 🌿

I happen to have all those ingredients, so it must be fate! I never used to cook with wine, but I love it. I keep a bottle in my fridge just for recipes like this. I also have a thyme plant, so that's perfect. And I just made homemade veggie stock and washed all my kale. I know what's for dinner. Thanks!

_Grazie du cuore!_ We knew Hugh FW's "mushroom risoniotto" but your veg-included version is our go-to now. A spoonful of balsamic adds 'zing' if substituting the goat's cheese with ricotta or crème fraîche. The recipe adapts well to chopped baby carrots, bell peppers, artichoke, leeks, and so on—great if using up oddments.

I made this without the wine, thyme and goats cheese. I used Parsley, chicken thighs and cheddar cheese. Turned out brilliant. Thanks for a great dinner idea.
