we usually dip those in a vinegar-base sauce usually with a lot of diced onions, few slices of tomato and garlic. It's also usually paired with plain rice as the strong sour acidic + salty flavor is too overpowering if eaten on its own. If you ever had dried fish before (this needs to be fried first, as I've seen foreigners just straight up ate it raw like it's beef jerky, it's not), it's the same concept as some variations of dried fish thats also very salty.

Rinse in COLD water multiple times! Each time moving then around and letting it sit for 10 min. Then drain final time and dip in rice vinegar tastes AMAZING!! And NOT at all salty

We call it "gamay" or "latuh" in our language. We got lots of that in Southern Philippines, and it is one of the most memorable flavors (cuz it's always present during fun beach time with family, and it's good with fish and rice or other seafood, and soy sauce-based dip with lots of onions, tomatoes, chili, etc.)... It's so good!

Unless I'm mistaken you're supposed to rinse them? We always rinsed them after rehydrating them overnight where I worked with them.

The more time the grapes spend in water the longer the reverse-osmosis process will take place removing much of the salty bitterness. You can also simply soak them in a sweet vinegar mixture such as apple cider vinegar with a couple teaspoons of vinegar to give a more nuanced flavor to them rather than just pure sodium.
