Easy Way to Use Springtime Wild Edibles

Here's an easy way to use springtime wild edibles! The edible plants in this video are listed below :

How I made the egg salad:

- Two large handfuls of the above wild greens (except the stinging nettle) chopped finely.
- 10 hard boiled eggs, cooled and grated
- I large onion, finely chopped
- 2 heaping tbsp jarred minced garlic
- 2 tbsp powdered mushrooms (I used Lion's Mane)
- 1 small handful of mung bean sprouts
- fresh grated black pepper

Place all the above into a bowl. I used mayonnaise and plain yogurt to combine the ingredients until the consistency was what I liked.

You can use just mayo or yogurt with sour cream, or any combination of these.

That was so enjoyable to watch. I wish I could take you for a walk around our family property. It's not large, but we have Ramps, Trout Lily, Mayapple, Trilium, watercress, Skunk cabbage, oh sheesh, other plants too. My sons and I wandered all over trying to ID them all. We're trying to get rid of some of the invasive plants and restore natives. Next spring I will at least harvest some Ramps.

That was one of the tastiest egg salads I have ever had! Its so nice to see the wild plants that went into it, all adding flavour and increasing the nutrient value of the salad for free! Thanks Karen for another delicious and easy to make recipe!

That "wild leek" is called "Ramp" in the eastern US mountain country, and is such a prized edible that "Ramp festivals" are held in the spring in some rural localities in the states of Georgia, North Carolina, Tennessee, and Virginia. Loving your videos, Karen!

Thanks for the wonderful video! Here in Colorado (US) it's been a hot early April as well. Lots of edibles showing themselves really early. That egg salad looks amazing!

Great video. This weekend I decided to eat some young stinging nettle. It stung my lip and for that I chewed up some plantain and applied it on my lip. The sting was gone is seconds. Nature is such a blessing and so is your wonderful channel.

I was taught from my father in law that the white leaks are not as bitter as the red stemmed leaks, so that is what I have always picked. I'm going to try your egg salad recipe. Looks great, , ,

I have been seeking more info about trout lilies. They are growing in my yard. I live in what is called the downtown historical district of my city. Every wildflower guide I have, tells me that they are endangered.
