Can you record the front and stereo signals on separate tracks so that you can later decide to what extent you mix them together or record two things at the same time?

I have the Zoom H4n and this one seems to have the same issue, that when you’re using the onboard mics the slightest touch anywhere on the entire unit is picked up by the mic really loudly, I don’t understand it
