I got to try this recently! It was good. I had it after an incredibly long hike, so it wasn't exactly filling, but if I had a lazier day, it would've been way more filling. This video made me crave it all over again.

I use glass noodles to make an easy summer noodle salad with shredded cabbage, finely cut carrot and cucumber and edamame. If I have more time I might add a little fried tofu. The dressing is just sesame oil, soy sauce, sesame seeds, white pepper or chilli flakes and powdered ginger and garlic. It takes ten minutes and is tends to please most people.

My sister always wants me to make japchae 😭 I've made it maybe 4 times now. After the last time I said no more japchae unless she's gonna help me and funnily enough she hasn't begged for it since then 😂 but her birthday will be in a couple months so I'm already mentally preparing myself that I'll likely make her some 😮‍💨 she's lucky I love her indeed!
