Made this last night. My first of your recipes & won't be the last. It was easy. Quick to put together. Just pop in the oven and go about other things while it cooked. Best of all it tasted great. I really like that recipe, and the best is that although it is already good and satisfying, it is still open for putting on extras such as mushrooms, cabbage or whatever you have in the fridge! 😊

Tried this recipe last night but added some pumpkin and mushrooms with it to use them up. Used Hickory smoked sausages and the result was absolutely beautiful.

Family favourite in my household but I will say, I need to cook the veggies alone for 30mins before adding sausages and then another 30-40mins to get soft potatoes. I let it sit for a further 30mins which thickens the sauce and cools it down enough to eat.

I do something like this with kielbasa sausage cut up into bite size pieces. I cook the potatoes in an air fryer for a while and brown the sausage as well before adding them to the rest of things in the oven. I like them to have a crust on them and I don't make a gravy to pour over either, but I might start doing that because this looks delicious.
