I am working as a pizza maker in a pizzeria in Christchurch New Zealand, and today, I show you how I make a cheese pizza (margherita) ! We make New York style pizzas.

That was great and the pizza looks awesome! I know that refrigerating the dough will give it that elastic quality, even when I don't add yeast. With my old oven though, I have to put the dough in the oven at 500˚ F without any sauce for it to prep for 10 minutes or so before then removing it to add the sauce and cheese. Thanks!

I've never seen a tray used in a deck oven. Is there a benefit? Most places cool right on the surface.
