I absolutely love this pasta! While I sometimes add pine nuts for extra crunch, this simple version made with white wine is a true favorite. The flavors are uncomplicated yet divine, making it the perfect cozy dish for any evening. The hint of chili adds warmth, without overwhelming the dish with spice.

Serves: 2

Ingredients:

200g pasta
4 tablespoons olive oil
2 cloves garlic
1 dried red chili
5-6 slices European anchovy
1 medium tomato
1/2 cup white wine
1 tablespoon tomato paste
A handful of fresh basil
Black pepper, to taste
About 1 cup pasta water
