INGREDIENTS :

Butter -225g
Brown sugar - 150g
Eggs - 2
Plain flour - 250g
Baking powder - 2tsp
Salt - 1/2tsp
Candied fruit - 300g
Milk - 4tbsp

Fruitcake (American Version)

Preheat oven to 340 F

Ingredients:

Butter - 1 c (remove 1 tbsp +/-)
Brown Sugar - 3/4 c
Eggs - 2
Plain Flour - 1 and 1/4 c
Baking Powder - 2 tsp
Salt - 1/2 tsp
Milk - 4 tbsp
Candied Fruit - 1 and 1/2 c

Directions:

Mix butter and brown sugar.
Slowly add eggs and beat till smooth.
Sift and add flour, baking powder, and salt.
Mix well.
Add milk and beat till smooth.
Add fruit (and nuts if wanted).
Pour into greased and parchment-lined loaf pan.
Level top.
Bake for 1 hour.
