FESTIVE HOLIDAY FRUIT CAKE

1 1/2 cups (12 oz.) Sunripe Fruit Cake Mix
1 1/2 cups (12 oz.) Candied Pineapple Wedges
8 oz. Candied Red Cherries
8 oz. Candied Green Cherries
1 cup dried apples, coarsely chopped
1 cup pitted dates, coarsely chopped
1 1/2 - 2 cups dark raisins or currants
1 cup pecans, coarsely chopped
1 cup walnuts, coarsely chopped
1 3/4 cups all-purpose flour
3/4 cups granulated sugar
3/4 cups packed light brown sugar
1/2 cup butter, softened
5 eggs
2 tablespoons dark molasses
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 cup bourbon or rum

1. In a large bowl add all dried fruits & nuts. Pour bourbon or rum over fruit and nuts. Toss. Let stand 2 to 3 hours, stirring occasionally.

2. Measure remaining ingredients into large mixing bowl. beat at medium speed until blended; beat at high speed 3 minutes, scraping bowl occasionally.

3. Stir fruit mixture into batter.

4. Spread fruitcake batter evenly in a very well greased and floured 12-cup fluted or angel cake pan, or 2 loaf pans. Press mixture firmly into pan(s).

5. Bake in a pre-heated 250 F. degree oven until toothpick inserted in center of cake comes out clean, 3 to 3 1/2 hours.

6. Cool in pan on wire rack 20 minutes; invert onto wire rack and cool completely.

TIPS: Garish with whole cherries, pineapples and nuts. Store in an airtight container or wrap well plastic wrap and the tin foil.

You made me cry. My mother made fruitcake every year. We always got a small one at Thanksgiving, but she aged the big one for Christmas. Mom has Alzheimer's now and doesn't cook any more, but as I watched this video I was a kid in mom's kitchen again. I love your voice and your joy as you describe everything. Thank you for bringing back such beautiful memories. I'm going to try your recipe. Keep doing what you're doing - it's more than just food.

I just finished making the fruitcake. I added the grated rind of one orange, a tablespoon of vanilla extract, half a teaspoon of nutmeg and a quarter cup of Amaretto. It's really good! But both my husband and I thought it needed more of a spice kick; we could hardly taste the cinnamon. I will definitely make it again because it was so simple in the three tins filled almost to the top, and the timing was exactly 3 hours @250F as the recipe showed. So next time I make it, I will add more cinnamon, more nutmeg, cloves, a teaspoon or so of salt, and more booze! to make it just to our liking. Thanks Deronda, and Merry Christmas!!

I am so happy. I made your fruitcake and it's so good, a piece of fruit in every bite. The second one I have ever made, and I am 80 soon to be 81. lol. I tried another one on youtube where she said non fail.  When I tried to pick it up to set in a shipping pan to my sister, [birthday today Jan 30] it just fell apart. I tasted it and it tasted terrible. Threw it out and your's has held up great. I soaked the fruit, [she can't have any nuts, but the pineapple is kind of crunchy, and no apples] with Cherry Merier liquer... I had enough for a loaf pan and we have eaten almost all of it. Every day I put the liquer in the holes and over the top. Double yummy...Thank so much. And I know my sister will thank you. She is 81 today..Yippee. Happiness is a good fruitcake.

Our family is so rare because everyone loves fruitcake including sons-in-law. This type of fruitcake reminds me of a stained glass window.

I have used this recipe for 2 to 3 years now thank you so much it’s absolutely my favorite. I am editing. After tasting my fruit cake many times after it cooled I added more spiced rum to the baked cooled cake repeatedly. Every so often. The desired effect was a dry cake became moist with rum and elevated the flavor. Just the way I remembered from my youth.

Wow, what a great video on how to make fruitcake. My husband LOVES fruitcake and I love to bake, but in all honesty I have never made one. Now that I have found this recipe and watched this video, I plan to make this for one of my husband's Christmas gifts. Thanks for such a good video. Your enthusiasm is contagious! And your hands are SO clean! Love not seeing rings and fake fingernails on videos regarding food prep!

Thank you for this recipe. It is like the one my late aunt used to make every Christmas. She was diabetic and couldn't eat them but she gave them away every year. They were delicious. I'm allergic to nuts now so I couldn't eat hers now. She died in 2006 four days after her 100th birthday. She made fruit cakes, cakes of all kinds, jellies, her dresses and skirts and crocheted not reading instructions and drove, took care of her house and cooked. She only had a third grade education but so very smart. She gave up driving when she was 85 and did all of the other things until she was 96 years old. Her twin brother died when he was 53 years old.
She always soaked her fruit cakes in whatever wine she bought. She would wrap white paper towels around each one of them and pour wine over each. She would do that often when the paper towels started drying out. They stayed in her refrigerator soaking until she was ready to give them at Christmas. They were so moist and delicious.

Update...Hi again. I made your awesome fruitcake for my sister for her 82nd birthday Jan. 30th, 2017. She loved it. I shipped it to her and she said it was moist and soooo good. So she and her daughter ate it all up in about a month and a half. I plan on another one for us this coming Christmas. My sister wants one too lol.  I made a small one in a loaf pan with the left over mix. Yum
