Almond Cookies Recipe 🤍

Crispy on the outside with almond flakes, soft on the inside, these cookies bring a delicate sweetness and the nutty flavor of almonds – perfect for any coffee break! 🥰

📝 Ingredients

• 110 g butter, softened (1/2 cup)
• 90 g sugar (just under 1/2 cup)
• 1 tsp vanilla extract
• 2 egg yolks
• 100 g ground almonds (blanched, finely ground) (1 cup)
• 100 g all-purpose flour (3/4 cup)
• 1 pinch of salt
• Egg whites (for rolling) (approx. 1–2 egg whites)
• Almond flakes (for rolling) (1/2–3/4 cup)
• Powdered sugar (for dusting after baking) (as needed, approx. 1/4 cup)

🤍 Preparation:

1. Cream the softened butter and sugar in a bowl. Add the vanilla extract and egg yolks, and mix well.

2. Add the ground almonds, flour, and a pinch of salt. Mix everything into a smooth, soft dough.

3. Wrap the dough in plastic wrap and refrigerate for about 30 minutes.

4. Roll the chilled dough into 12–13 balls.

5. Lightly whisk the egg whites, then roll the dough balls in the egg whites. Afterward, roll the balls in almond flakes until they are well coated.

6. Place the balls on a baking sheet lined with parchment paper. Gently press the tops of the balls to flatten slightly.

7. Bake in the preheated oven at 180°C (350°F) for about 12–15 minutes, until lightly golden brown.

8. After baking, let the balls cool slightly on the baking sheet, then carefully transfer them to a wire rack.

9. Once cooled, lightly dust the cookies with powdered sugar.
