✳️ Chive blossom vinegar should last 2-3 months at room temperature stored away from direct light. It may be refrigerated for longer shelf life. When it starts to have a cloudy appearance, it has gone bad.
💚Health benefits…Chive blossoms are a great source of antioxidants, vitamins, minerals, and are known to have antibacterial, antifungal and antiviral properties. The vinegar turns pink due to its anthocyanin content which is an antioxidant.
💦Wash chive blossoms and allow excess water to evaporate. Put 1 cup of blossoms in a jar and pour 1.5 cups vinegar till blossoms are submerged. You can lightly pack the blossoms in with a spoon. If you’re not using a stainless lid, place a piece of parchment paper in between to prevent rust.
🫙Place in a dark and cool area for two weeks. You can speed up the steeping process by warming the vinegar first (do not boil). The warm vinegar infusion can be used within 3-4 days. Store at room temperature away from direct light. Will keep for several months.

💜Anthocyanin is a water-soluble pigment (molecule) that gives chive blossoms it’s purple hue as well as many other plants. The color of the pigment changes if combined with substances with differing pH.
🧪The pH surrounding the molecule can be altered by adding something acidic like vinegar or alkaline like baking soda. The vinegar is acidic which turns the pigment pink. If combined with an alkaline base it will turn blue/green.
