The Wasabi You Eat Probably Isn’t Wasabi

Most of the time, the wasabi you get in a restaurant or buy in a store is fake. It’s actually horseradish that’s colored green. Why? Well, wasabi is a notoriously difficult plant to grow. In fact, it’s considered the most difficult plant in the world to farm commercially. Yet for the past century, the Daio Wasabi Farm in Hokata, Japan, has been growing it successfully with natural spring water from nearby mountains.

This story is a part of our Flavors series, where we do so much more than play with our food. Come with us as we dive into deliciously different and tastefully off-beat stories in the culinary world.

Great Big Story is a video network dedicated to the untold, overlooked & flat-out amazing. Humans are capable of incredible things & we're here to tell their stories. When a rocket lands in your backyard, you get in.

Just if anyone's curious, the thing that the chef rubs the wasabi against is a shark skin

“Is wasabi an instrument?”
“No patrick, it’s just horseradish.”
*raises hand*
“Horseradish is not an instrument either.”

I wish I had a job that I could say: I can see myself doing this for the rest of my life. I'm good at lots of things, and people pay me to do them, but I haven't had a job yet where I'd want to do it for the rest of my life.

For all of those in the US, you may have had real wasabi IN the US as it can grow in certain parts of the northwest coast, predominantly in Oregon :) Some states do get shipments from there. That's where I experienced my first real wasabi, and I've never had the powdered version again. The difference is tremendous and I've never been able to overcome it!

If you've ever had Natto, they pack it with Hot Mustard, and after tasting it I felt it was similar to store bought Wasabi. Doing more digging, the fake Wasabi most places use is made with Hot Mustard, which explains the similarity. Real Wasabi is actually a lot milder, and almost has a green tea like aftertaste.

Knew about this. But interesting nevertheless to know how rare and difficult it is to grow and distribute wasabi.

...this feels kinda weird. I thought that wasabi was always made from horseradish... I didn't know it was its own type of plant

I thought I hated Wasabi my whole life until I tried the real stuff at a restaurant one day. I was confused, wondering why it wasn’t tasting how it normally does until I saw this video.

The way in which you format your videos is just nice, organized incredibly engaging and is fulfilling to the eyes

I grow wasabi in a pot under my back porch. It is definitely not the hardest plant to grow. It's probably one of the easiest.
