The sacred six.
Lechonk - HP (beginning area + various plains)
Shinx - ATK (Mesagoza East)
Tarountula - DEF (beginning area)
Litleo - SP.ATK (pokemon center on the way to electric gym - Mesagoza East has them as rare encounters)
Hoppip - SP.DEF (Beginning area or same area as Litleo + Mesagoza West)
Deerling - Speed (Same area as Litleo)

Bonus-
Paldean Tauros (ATK + Speed)
Yungoos (ATK - Mesagoza West Plains)
Mareep (SP.ATK - Mesagoza West Plains)
Rookidee (Speed - Mesagoza East - they can rarely spawn as a swarm of 5 with the flying encounter type sandwich buff)

Sandwiches can aid their spawn rates if you match their types.
Power items are always good for low level farms cause you can get an EV trained pokemon in as little as 5 minutes since they give 8 EVs instead of 4 EVs (As of Gen 7). In the long run, you save money compared to buying vitamins. Most mons only need to be level 20-25 to OHKO the other mons mentioned above as they are low level zones.
To me, EV training is far easier than it was in Sword + Shield. This open world mechanic fixed a lot of problems the wild area had.
Nacli can be a problem due to Sturdy which makes defense EV training a bit of a problem.

The crater area is good for ev training, like Raichu for speed, flutter tail hp, gold dock for spA, corviknight defense, floette spD, there all pretty much in abundance down there, took about 45 minutes to take 6 breed Pokémon to max ev and raise there lvl to 50 down there.

A basic version to look at EV’s and natures: EV’s increase a stat by a flat amount, while natures increase a stat by a percentage. This means that natures are more efficient the higher your stat is. For defensive stats this is especially important because getting the right nature can make a huge difference since it will allow you to spend a huge extra amount of EV’s elsewhere. On a Pokémon like blissey having max defense EV’s will nearly double your defense because her base defense is so low, which means you reduce the physical damage you take by almost 50%, which is why it’s not very good to have a +defense nature on blissey but it’s very good to have 252 defense on her

The beginning area is perfect for ev training. Buy 6 of each power item and ev train 6 Pokémon at a time.

I made 12 Pokémon level 100 and perfect stats in an hour or two.

I now crush level 5 and 6 raids, mostly solo.

I didn't spend any cash on vitamins, and the power items are reusable.

Honestly this game is great for old school mechanic training of EV. The hardest part back in day was having to find the right mons. Now i see it. I attack it. Everything else just gets lets go'd. Been a beaut. Not even finished league and i got my competitive teams done nearly.

Holy moly things have really evolved from my days of biking eggs up and down in Solaceon Town to hatch perfect IVs in gen 4. Also growing a surplus of all the berries to lower all IVs and building EVs from the ground up battling pokemon with a Macho Brace or a Band.

Now its just, Raid, Bottlecap, Hypertrain or Feathers.

At least vitamins still exist, I understand those.

Edit: Now you change the nature too. I remember having to spend hours breeding my brother a perfect IV Nature Togepi with Serene Grace; what an ordeal.
Kids these days wouldn't understand.
And thats not even mentioning egg move breeding.

Competitive Pokemon is so deeply strategic and fun. For anyone intimidated about getting into it, try some random team matches on showdown and you'll be hooked. Myself I prefer gen and 5 metas and only dip my toes into the more modern games occasionally but its such a blast to learn.
